A refreshing vinaigrette for a tropical salad
Ingredients
For the salad
- 3 cups farmer’s market baby greens
- 1/2 sliced mango
- 1 tbsp chopped peanuts
For the dressing
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 tbsp honey
- 2 tbsp finely chopped fresh cilantro
- 1 garlic clove, peeled and minced
Instructions
- Combine lime juice, olive oil and honey in a food processor. Blend until smooth. Whisk in cilantro and garlic. Serve over sliced mango and greens and sprinkle with chopped peanuts.
