A refreshing vinaigrette for a tropical salad


Ingredients

For the salad

  • 3 cups farmer’s market baby greens
  • 1/2 sliced mango
  • 1 tbsp chopped peanuts

For the dressing

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 2 tbsp finely chopped fresh cilantro
  • 1 garlic clove, peeled and minced

Instructions

  1. Combine lime juice, olive oil and honey in a food processor. Blend until smooth. Whisk in cilantro and garlic. Serve over sliced mango and greens and sprinkle with chopped peanuts.
