Description
A not-so-sweet dessert parfait featuring Ridiculous Cookies Biscotti Crumbles.
Ingredients
For whipped cream
- 3/4 cup heavy whipping cream
- 1/4 cup powdered sugar
For raspberry layer
- 2 pints raspberries, rinsed and drained
- 2 teaspoons white sugar
- 1 teaspoon Marsala wine (optional) or water
For ricotta layer
- 1 cup full fat ricotta cheese
- 1/2 teaspoon cinnamon
- 1/8 teaspoon allspice
- 2 tablespoons powdered sugar
- 2 tablespoons whipped cream
For biscotti layer
- 3/4 cup biscotti crumbles
Instructions
For the whipped cream
- Sift the powdered sugar into the whipping cream. Using a hand mixer, whip on medium until stiff.
For raspberry layer
- Combine raspberries, sugar and Marsala or water and mix well. Mash raspberries with a spoon leaving some texture to the raspberries.
For ricotta layer
- In a medium bowl, combine ricotta, cinnamon and allspice. Sift in powdered sugar. Mix well to combine. Fold in 2 tablespoons whipped cream.
For the parfaits
- Taking care to maintain each layer, in the bottom of 4 martini glasses or other dessert glasses, place one tablespoon of raspberry, 2 tablespoons of ricotta mixture, 2 tablespoons of biscotti crumbles, 3 tablespoons of ricotta mixture and 2 tablespoons of raspberry.
- On top of each glass, scoop or pipe approximately 1 1/2 tablespoons whipped cream and scatter an additional tablespoon of biscotti crumbles on top.
- Serve immediately.
Notes
- Raspberry mixture and ricotta mixture can be prepared up to 24 hours in advance, but wait to spoon into glasses until ready to serve.
